Chilean Independence Day!
Ok, so anyone that has served a mission, especially in a different country, could probably relate to my insisting that we celebrate Chilean independence way in at least some small way. September 18th fell in the middle of the week, and I wasn't able to celebrate on the exact day (minus playing some Chilean music for a short few minutes), so we decided to celebrate this weekend when I could dedicate some time to making empanadas and alfajores. We invited two other couples over for dinner, and enjoyed some Chilean food...yum!
These are the empanadas and alfajores we made. We did some ham and cheese ones, and then also the more traditional kind with a meat mixture, hard boiled egg, and an olive. The alfajores were pretty huge, and we did some with the traditional homemade coconut, and others covered in chocolate. They were ok, but not as good as the real thing.
The salads you see are how the are normally eaten in Chile. They don't mix the vegetables. They will have a separate "salad" for lettuce, tomatoes (mixed sometimes with onion), cucumbers...etc. They don't use dressing, either. Just a little oil, lemon juice, and salt. One of the couples also tried mate (pronounced mah-tay). It's an herbal drink that they have in South America. I used to drink it everyday during personal study, but don't drink it much anymore. When I first tried it, I used to think it tasted like grass. Now I love it! Justin even tried one sip of it. SUCCESS! :)
